Annie's BMF-approved brownies!

When Annie whipped out a box of delicious (and healthy...ish!) brownies, they were devoured within minutes so we can officially confirm that these have been tried and tested by real BMF members and instructors with massive success!

Annie has decided to let us in on her little secret, so here's her recipe:

INGREDIENTS
- 1.5 cups walnuts  (I used the extra half to either sprinkle on top or just add to the "dough").
- 1 cup of almonds
2.5 cups of dates, pitted (medjool dates are the best!). If you don't have these then dry ones can be soaked in warm water for 10-15 minutes and drained.
3/4 of a cup of cacao powder
1/4 teaspoon of sea salt
1 scoop of vanilla protein powder (optional - I prefer the taste without it, but if i need the protein kick then it's a big fat yes! They had protein powder on the day)

 

PROCESS
- Add 1 cup of walnuts and almonds in a food processor or blender until its finely ground. Add the cacao powder and sea salt. Blend it or pulse it until it's all combined. Set aside in a bowl for later

- Add the dates to the food processor until small bits remain. This can be tricky if you only have a blender or nutribullet...like I did. If that's the case throw one or two in and blend them. It has managed to ruin most blenders I've bought but not the food processor I purchased the other week!! Once it's turned into a bit of a mushy mess set it aside.

- Add the initial nut and cacao mixture back in to the food processor and add small handfuls of the date pieces. Or do as I do and just add it all in a bowl and get stuck in with my hands! A lot easier that way.

- Once you've got a doughy consistency, add the mixture to a small parchment lined 8x8 dish and just before you press it all out, add the half a cup of walnuts to it (cacao nibs are also amazing!). Press it all down until it's flat and firm. Squeeze the sides to make it into a square.

- Finally, just pop it in the fridge for an hour (can be 10-15 minutes) and then cut into however many pieces when you're done.

This looks like a long process but it's really easy and doesn't take long at all, promise!

Food

ANNIE'S ADDITION
There is also a chocolate layer that I make that goes beautifully... 1/4 cup coconut oil, 1/4 cup maple syrup and 1/4 cup raw cacao powder. So not good for you, but so delicious!! Melt all of it on a low heat and add to the top of the brownies and put in the freezer. Yum!

MIX IT UP A LITTLE
I also experimented by adding goji berries and some orange zest too to make some protein balls! These are great post run or BMF session.
